Caramelized Onions

- 2 Tbsp (25 mL) butter
- 1 Vidalia or sweet onion, thinly sliced
- 1/4 cup (50 mL) sweet sherry
- Pinch salt
Makes 1/2 cup (125 mL)
Melt-in-your-mouth tender and sweet as can be, caramelized onions are a great accompaniment to a cheese plate with roasted garlic cloves and fruit chutneys or used top everything from barbecued brats to coddled eggs.
- Melt butter in medium non-stick skillet over medium heat.
- Add onion and cook until translucent, about 10 minutes.
- Reduce heat to medium-low, add sherry and salt and cook until very soft and golden brown, about 20 minutes.
