Yogurt and Granola with Strawberry Coulis

- 3 cups (750 mL) plain yogurt
- 1/2 cup (125 mL) honey
- 1 tsp (5 mL) vanilla
- 2 cups (500 mL) strawberries
- 1 Tbsp (15 mL) Chambord
- 2 tsp (10 mL) granulated sugar
- 1 tsp (5 mL) fresh lemon juice
- 3 cups (750 mL) granola

Break out the Birkenstocks and patchouli, we’re off to the health food store! This recipe is for our nature-conscious readers and it contains barely enough booze to knot your dreadlocks. It’s simple, portable and perfect for the start of an active day. Peace.
- Combine yogurt, honey and vanilla in a medium bowl and set aside. Combine strawberries, liqueur, sugar and lemon juice in blender and blend until smooth. Pour this coulis through a sieve to remove any seeds from strawberries.
- Layer coulis, yogurt and granola in attractive glassware and serve with long spoons.
Thin Red Line
For a perfect line between the strawberries and the yogurt pour the coulis in the glass and freeze for 20 minutes, or until firm. Spoon in yogurt and top with granola. Let stand at room temperature for 15 minutes before serving.
